This week as it my Birthday on gaming night tonight I have knocked up a Thai Green Chicken curry.
Nice and easy recipe.

Ingredients
8 boneless and skinless Chicken thighs (these have better flavour and don't dry out as much as breast)
12 Baby new potatoes
Bag of Green Beans
You can swap the above veg for any veg you like
450ml Can of Coconut Cream
Jar of Blue Dragon Thai Green Curry Mix
I know the above is a bit of a cheat but want this on the table quick quick so we can game.
Fish sauce to taste
First cube up the Chicken and then fry off until browned. Remove from the pan.
Add half the jar of the Thai sauce till sizzling, pop the chicken back in and breath in those great aroamas.
Once the flavours are bouncing shake the can of cream, open and add to the chicken.
Then top and tail the beans, cut in half add to the sauce. Quarter the potatoes and drop in the mix. Cook for about 15 minutes or until the potatoes are cooked to your liking.
I serve with Jasmine Rice
